Job Description

Proper Hospitality is seeking an experienced Sous Chef to join the culinary team at The Shelborne by Proper, a renowned hotel re-opening and debuting in our portfolio in early 2025.

Our property will introduce four vibrant new food & beverage destinations to the neighborhood, each suited for warm weather dining, with an all-day signature restaurant, a lobby bar-lounge, and curated cafe. Resort amenities will include a spacious pool and lush garden lounge, indoor-outdoor cabanas, sundeck terrace, state-of-the-art fitness center, dedicated access to a private beach club, and more than 15,000 square feet of indoor-outdoor meeting & event space.

The Sous Chef is a critical part of the culinary team, working closely with the Executive Chef to manage the kitchen's day-to-day operations. This role involves leading the team, maintaining the highest standards of food preparation and presentation and ensuring an exceptional guest dining experience.

Key Responsibilities:

  • Kitchen Leadership : Supervise and inspire the kitchen staff, fostering a culture of teamwork, professionalism, and continuous improvement
  • Menu Collaboration : Collaborate with the Executive Chef to create and refine menus that reflect the hotel’s culinary vision, emphasizing seasonal and locally-sourced ingredients
  • Food Preparation : Oversee food preparation, ensuring consistency, quality, and adherence to the highest culinary standards
  • Operations Management : Assist in the management of kitchen operations, including inventory, ordering, and cost control
  • Health & Safety Compliance : Ensure compliance with all health, safety, and hygiene standards, maintaining a clean and organized kitchen
  • Training & Development : Mentor and train junior kitchen staff to enhance their skills and ensure a pipeline of talent within the team
  • Problem-Solving : Address any kitchen challenges promptly, maintaining a calm and professional demeanor under pressure

Qualifications:

  • Experience : A minimum of 3-5 years in a high-end restaurant or luxury hotel kitchen, with at least 2 years in a leadership role
  • Education : Culinary degree or equivalent experience
  • Skills :
  • Expertise in multiple cooking techniques and cuisines
  • Strong organizational and multitasking abilities
  • Exceptional attention to detail and presentation
  • Effective communication and leadership skills
  • Passion : A deep passion for food, creativity, and delivering exceptional guest experiences
  • Flexibility : Ability to work evenings, weekends, and holidays as needed
